Class of 2012 senior season is in full swing at both our Mequon and Delafield photography studios! We’re busy trying to keep up with all your great indoor and outdoor photo sessions and we’ve been shooting, editing and ordering like crazy! We can’t believe how fast the summer is flying by and just want to remind everyone in the Class of 2012 that school is starting soon, which means many yearbook deadlines are fast approaching. Baking with Class of 2012 Senior Kayleigh!

No Bake Fudge Cookies

I love making these cookies. They are so quick and easy! They’re perfect for a movie night with your friends.
(servings 18)
Ingredients
  • 2 cups white sugar
  • 1/2 cup milk
  • 1/2 cup butter
  • 3/4 cup peanut butter
  • 3 cups quick cooking oats
  • 6 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract

Directions

  1. In a large saucepan combine, 2 cups sugar, 1/2 cup milk, 1/2 cup butter, and boil for 1 minute.
  2. Take off heat and add peanut butter, quick cooking oats, cocoa, vanilla and raisins.
  3. Stir well. Drop by teaspoon on wax paper Let sit one hour.

  • The pronunciation of my name is similar to (Eye-luh).
  • I LOVE Scooby-Doo fruit snacks, Grape G2 and Frosted Mini Wheats!
  • I drive a silver Jeep Liberty named “Jeepy”.
  • Grey’s Anatomy is my absolute favorite show.
  • I am the middle child of five. We all have names starting with vowels.
  • My favorite movie of all time is The Parent Trap, followed by Titanic.
  • Sometimes I prefer to listen to classical music (composed by John Williams, of course!) instead of the radio, but I love all kinds of music. Some of my favorite artists are Keith Urban, The Fray, Jon McLaughlin, and Taylor Swift.
  • I love Oprah Winfrey! I miss her show already.
  • I don’t like soda.
  • My toes are double jointed.
  • I love Summerfest! The food, the music, the people. I go as many days as I can every summer.
  • Sometimes I wish I was left handed.

  • I had to get stitches for the first time on December 28, 2010; the day before my sixteenth birthday.

    Learning how to cook with our Class of 2012 Senior, Morgan!

    Every once in awhile, my Grandma brings me Bon Appetit magazines. I found this recipe in one and my sister and I decided to make it for my mom for mother’s day. It was one of the most delicious things I have ever eaten. However, we substituted the grape tomatoes for small heirloom tomatoes. We served it with a French baguette. It’s really very simple to make and turns out great!
    Rigatoni with Eggplant and Pine Nut Crunch

    INGREDIENTS

    • Nonstick vegetable oil spray
    • 1 unpeeled large eggplant, cut into 1/2 inch cubes
    • 2 medium yellow bell peppers, cut into 1/2 inch squares
    • 2 cups grape tomatoes
    • 3 large garlic cloves
    • 1/3 cup olive oil
    • 2 cups (firmly packed) fresh basil
    • 1 cup freshly grated Parmesan cheese
    • 1/4 cup pine nuts
    • 1 28-oz can whole tomatoes in juice
    • 1 cup heavy whipping cream
    • 1 pound rigatoni
    • 1 pound whole-milk mozzarella, cut into 1/2 inch cubes

    Preheat oven to 425° F. Spray a large rimmed baking sheet with nonstick spray, add eggplant and peppers. Cut tomatoes in half length-wise and add to sheet. Drizzle the vegetables with olive oil and sprinkle liberally with salt and pepper. Using a garlic press, squeeze one garlic clove over vegetables. Toss mixture together. Roast vegetables until tender, stirring often (about 35 minutes).
    Combine 2/3 cup basil, 1/2 cup Parmesan cheese, pine nuts, and 1 garlic clove in a food processor. Blend until crumbly. Top with salt.
    Blend tomatoes with juice, cream, 1 1/3 cups basil, and 1 garlic clove in a food processor or blender until smooth. Season sauce with salt and pepper.
    Cook pasta in salted boiling water until al dente, drain. Return pasta to pot and toss with sauce, vegetables, and remaining Parmesan cheese. Transfer mixture to a 13x9x2″ baking dish. Sprinkle with mozzarella and pine nut topping. Bake until heated through and cheese is melted (about 30 minutes).
    Let stand 10 minutes. Serve and enjoy! 🙂

    Class of 2012 Senior Model-Kayleigh

    This past weekend I had the opportunity to photograph Kayleigh, one of our Class of 2012 senior models in Milwaukee. Kayleigh had the cutest outfits with great spring colors (and awesome makeup). I loved her sense of style and she had the sweetest personality to match. Even though the weather was still a wintry mess, we were able to pretend it was sunny with some fun, indoor, warm-weather looks. Kayleigh will be coming back in May for some more outdoor photography, and I can’t wait to shoot something more urban and (hopefully) green!
