Great new recipe book!

I’m always on the hunt for great recipes and found the Hungry Girl Cookbook. Its based off of the famous Hungry Girl website (www.hungrygirl.com) and features low-calorie options for decadent foods such as onion rings, chicken strips and chocolate gooey desserts.

The onion rings below are only 160 calories for the WHOLE recipe (which makes a huge pile!)

One onion (large) sliced (I like Vidalia!)
1 cup of original All Bran
Salt/pepper (and any other spices you may like, garlic powder etc..)
1/4 cup fat free egg substitute (egg beaters)

In a food processor (or something like the magic bullet) ground up your cereal and spices to make a ‘breading’.
dip your onions in the egg substitute and then in the ‘breading’.

Lay them onto a baking sheet sprayed with non-stick cooking spray. Bake about 20 min. at 375 until soft.

Delish!

You can make chicken strips the same way using boneless-skinless chicken breasts. A whole sinful meal for less than 350 calories.
