Another Fantastic Household Tip

Is it cheaper to buy a whole new blender or just replace that busted blender jar? Until you figure that one out, you might try this: Many detachable blade assemblies screw right onto a mayo jar or a small-mouth Mason jar. Don’t fill it by more than half, though, and as with any regular blender, avoid very hot liquids.

The Best Peanut Butter Cookies I’ve Ever Had
I have been eating these since I can remember. Store brand cookies can’t beat this. Hope you try it out and enjoy!
Ingredients:
In one bowl:
1cup peanut butter
1 cup shortening
1 cup sugar
1 cup brown sugar in bowl until SMOOTH
Beat in 2eggs
1 tsp Vanilla
In separate bowl mix dry ingredients…
2 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
You can add extra flour if batter is too sticky….add it LITTLE by LITTLE
Roll into balls on UNgreased cookie sheet
Use a fork to pat them down to a typical cookie shape. The fork will give the top of the cookie a criss-cross pattern.
Bake for about 10min at 350F

No Bake Fudge Cookies

I love making these cookies. They are so quick and easy! They’re perfect for a movie night with your friends.
(servings 18)
Ingredients
  • 2 cups white sugar
  • 1/2 cup milk
  • 1/2 cup butter
  • 3/4 cup peanut butter
  • 3 cups quick cooking oats
  • 6 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract

Directions

  1. In a large saucepan combine, 2 cups sugar, 1/2 cup milk, 1/2 cup butter, and boil for 1 minute.
  2. Take off heat and add peanut butter, quick cooking oats, cocoa, vanilla and raisins.
  3. Stir well. Drop by teaspoon on wax paper Let sit one hour.

Ceviche: yummy favorite of Shoot the Moon

I’m a fan of ceviche. Its light, fresh and yummy!

When I was on a photographer retreat we had a chef come and do an interactive demonstration on Raw foods and she made an amazing coconut ceviche where the young coconut tool the place of the fish. I prefer the fish, and wanted to share my favorite recipe!

Preparation time: 15 minutes to prepare, 3-4 hours to let sit. Always use the freshest fish possible. Make the same day you purchase fresh fish.

INGREDIENTS

  • 2 lbs of firm, fresh red snapper fillets (or other firm-fleshed fish), cut into 1/2 inch pieces, completely deboned
  • 1/2 cup of fresh squeezed lime juice
  • 1/2 cup of fresh squeezed lemon juice
  • 1/2 red onion, finely diced
  • 1 cup of chopped fresh seeded tomatoes
  • 1 serrano chili, seeded and finely diced
  • 2 teaspoons of salt
  • Dash of ground oregano
  • Dash of Tabasco or a light pinch of cayenne pepper
  • Cilantro
  • Avocado
  • Tortillas or tortilla chips

During the marinating process the fish will change from pinkish grey and translucent, to whiter in color and opaque.

Serve with chopped cilantro and slices of avocado with heated tortillas for ceviche tacos or with tortilla chips.

Serves 4-8.

Twelve Pines Pizza-Eagle River

I recommend Twelve Pines pizza in Eagle River on Catfish Lake. We were there over Memorial Day weekend and the place was packed but well worth the wait. If you have kids, there is a little game area for them to try their luck in getting a little stuffed animal. What makes the pizza so tasty is the cheese, lots of it! I recommend the thin crust! The Bloody Marys are great also as they make it like a meal in itself, just ask for the garden salad in the drink! 🙂
